Roasted Cauliflower Mash

Ingredients


  • 1 head cauliflower

  • 2 cloves garlic

  • 1 tsp ghee

  • ⅛ tsp salt

  • 2 tbsp mayonnaise

Step 1


Preheat oven to 425 degrees Fahrenheit.


Step 2


Cut cauliflower into pieces, toss cauliflower and garlic cloves in melted ghee, then spread out into an even layer on a rimmed baking sheet. Season with sea salt and bake for 30 minutes.


Step 3


Carefully transfer roasted cauliflower and garlic to a food processor or use a handheld immersion blender to puree ingredients. Blend in mayonnaise once the cauliflower has been pureed.


Step 4

Season with salt and pepper to taste.
